1 month


Wow, it is hard to believe that it's already been a month since little Joey came into this world. He has gotten so big, well, if you consider 7lbs big...He is fitting into Newborn sizes now, which is good, cause that's what he is! He looks kinda crazy in that picture, but that is ok...we will still love him!

This picture is significant for 2 reasons. #1 This is the first picture that I've gotten Kirk to take with Joey. He really likes his brother, only when nobody else is looking. Otherwise, he wants nothing to do with him. But, sometimes when I walk into the kitchen, he will walk up to him and say "Hi Joey" and dance elmo in front of him. Really cute stuff. #2 Kirk was looking a bit like Lloyd from Dumb and Dumber, so I, all by myself, gave him a hair cut. Usually, I take him and let my friend cut it, but I couldn't wait. I put him in his high chair facing the tv, popped toy story on, and cut away. No tears and no blood. Score one for mom!

My sweet baby sister is graduating high school in a couple of weeks. She needed some extra shots to put in her invitations. So, I went out and took a few around our yard. Super cute!

More Good Recipes!

Ok, so, I've decided that I'm going to start cooking again. I've been going through a phase that includes lots of pb&j sandwiches, but that phase is about to end. Here are 2 more good (maybe not super good for you) recipes!

Chewy Chocolate Chip Cookies

2 c all purpose flour
1/2 tsp baking soda
1 tsp salt
1 c butter-softened, but still firm
1/2 c granulated sugar
1 c brown sugar-firmly packed
2 tsp vanilla extract
2 eggs, cold, straight from refrigerator
1 package semi-sweet chocolate chips, straight from freezer

Preheat over to 350. In a small bowl, whisk together flour, soda, and salt. In a mixing bowl, beat butter on med-high until creamy, about 1 minute. Add sugars and beat until fluffy, about 3 min. Reduce to med-low; add eggs 1 at a time beating after each. Add vanilla. Reduce beater to lowest setting and slowly add dry ingredients. Beat until just incorporated, do not over mix. Fold in chocolate chips. Drop by heaping tablespoons onto pan. Bake on center rack until edges are golden brown, tops are still pale, and the centers are soft, about 8-11 minutes, do not over bake. Let cool on pan at least 2 minutes then transfer to cooling rack to cool the rest of the way. This dough can also be frozen!

Wake Up Smoothie

1 1/4 c Orange Juice
1 banana
1 1/4 c frozen berries
1/2 c plain yogurt or tofu
1 tbls sugar or splenda

Blend until creamy; serve immediately.
(I used strawberry yogurt and frozen blueberries and it was fantastic!)

New Recipe

I found this and tried it for supper tonight. It's noodles and cheese, so it's kid friendly! I don't typically like cauliflower, but I loved it in this. Super good!

Vegi Mac and Cheese
1 c uncooked macaroni
1 c cottage cheese
1 c frozen vegis
1/2 c chopped mushrooms
3 chicken breast tenderloin, cubed
shredded cheese of your choice

Cook macaroni until tender. Place cottage cheese in blender and process until smooth. Meanwhile, cook chicken until done. Add mushrooms and vegis (I used broccoli and cauliflower) and heat thoroughly. Add macaroni and cottage cheese; heat thoroughly. Sprinkle with shredded cheese (I used colby & monterey jack). Enjoy!

Big Fat Fatty

Ok, so, I'm ready to be skinny again. I've started doing a few minor exercises and trying to limit my eating. I really want to try p90x, but, alas, I cannot pay $140 for the dvds....I am way too cheap.... So, does anybody have any suggestions? I may just stick to good ole fashion sit ups in the living room floor.

This has made me laugh so hard. My sister said he's doing "Blue Steel". Again, laughter, I can't even look at it without cracking up. His dad should be proud.

Skinny man

Danny insisted that I blog about this. The poor boy didn't have any pants small enough for him, so I went to walmart and bought him some jeans. Size: newborn. You could fit 2 of him in there. My mom bought preemie pants and they are way too big too. He's going to be wearing sleepers until we fatten him up a bit.
